The Performance 6 keeps the two-phase approach with fewer levels, while the Select 10 uses chrome-plated trays and a different door arrangement. Managing a ten-tray batch

Two sequential settings let you plan a change of time and temperature without returning to adjust the controls between phases. Keep similar slice thicknesses together and inspect the actual food before storage; the progress display follows the programme, not the moisture content of each piece.

The timer offers settings up to 80 hours, but the current manufacturer manual separately limits continuous operation to 48 hours followed by two hours of cooling.
